My Gobi Manchurian Story . [Spicy Indo - Chinese Couliflower fry , Step by step with pictures ]

Hey you guys :) 

How is the weekend coming along ? Today I made Gobi Manchuri . Gobi Manchuri has been my favourite  " Indo-Chini bhai bahi "  snack for a long time now . I have made so many "yummy" memories associated with it down the years. 

When , I was in second year engineering , I remember having really boring electronics subjects , head and tail of which I can't make out till this day ! Me and friend would always bunk classes post the short break ( 10 : 30 am :P ) and go sit in the canteen and eat gobi manchuri . We were his most regular customers and he would keep two plate gobi "majoori" ready for us every day . We almost flunked that year due to our lack of attendance in class . Phew , that was a close call !! And at the end of that year I ended up looking like gobi .. well that's another story altogether :P and I will save it for another day. 

So lets get with it then . You will need : 

  • One medium sized couliflower . 
  • Haldi ( Turmeric ) - 1/2 tsp.
  • Salt - according to taste .
  • Chilli powder - to taste .
  • Cornflour - 6-8 tbsp .
  • Garlic - 10 pods , juliennes. 
  • Ginger - 1 small piece , juliennes . 
  • Green chillies - 1 long , finely chopped . 
  • Oil - 1 medium , finely chopped . 
  • Oil - for frying . 
  • Soy Sauce - 1 tbsp. 
  • Tomato Ketchup - 1 tbsp. 
Well I am not sure how much Chinese flavor our "Indian" gobi manchurian has retained over the years , but whatever it is , we love it , don't we ?



So , first we must separate the florets from the cauliflower and set them aside . 

In a pan boil water and add a pinch of turmeric powder and salt . When , the water is hot add the florets & let them boil for five minutes . This cleans the florets really well . 



Drain the thoroughly cleaned florets through a strainer.


In a clean bowl add a cleaned florets and 4 tbsp of cornflour , salt and chilli powder and mix well . The florets will lap up this mixture well as they are already wet . However , if need be you can add slightly more water to bind all of this together . 


 In a wok , heat oil & fry these florets , strain and keep aside . 


 In another bowl , put 2 tbsp cornflour , 1/2 tsp salt , 1/2 tsp chilli powder and make a thin batter out of this . When , mixed well , add 1 tbsp soy sauce and 1 tbsp tomato ketchup . 


 
 In a pan heat 2 tbsp oil and put the ginger , garlic jullianes and the chopped onions and fry them till onions turn light brown . * dont burn them :P * . 


Now , add the cornflour batter prepared above to the wok and keep stirring . When this mixture starts thickening , add the florets and mix them well and make sure to coat all the florets well . 


Cook for five minutes on a low flame . Sprinkle finley with chopped coriander and enjoy :) :) .

No Drama Mongo Cheese Cake .

Heloooooo :) ! 

How was the weekend ? Am already feeling sad that its Sunday and tomorrow I have to go back to work , braving the horrible Banaglore traffic ! :( :( :( !!

So , yesterday was my mom ' s birthday ! :) And I made mango cheesecake for her . :) Yes , it was a shock to many people at home , to find me  in the kitchen - cooking and not eating :P . My nani actually had to do a double check to make sure it was really me and not my mom tinkering around the kitchen ! Needless to say everyone was very skeptical to try it ( my cousin brother said : " Is this juice , it looks yellow , do I need a straw ? ! " :P ) . 
But , it was actually yummy and so totally delicious ! :) . Yaay  for me ! :) 

So , what do we need : 

  • Biscuits- for the base - I used Hide and Seek and Marie Gold
  • Crushed Almonds - for the base ( used after crushing whole almonds in the blender to a fine powder)
  • Dark Chocolate Chips - for the base . You just needs a handful ( Iused Nature's Leonz
  • Unsalted butter - 75 gm ( I used Nandini )
  • Cream Cheese - 1 block ; about 300 gms ( I used Britannia Cream Cheese)
  • Cream -175 gms ( I used Impero Sour Cream , you can even use whipped cream ) 
  • Mangoes - 2 ( I used fresh sweet raspuri ) 
  • Vanila essence - a few drops 
  • Edible Gelatine - 1 tbsp 
  • Hot water - to dissolve the gelatine 
  • Sugar - as per taste .

To begin with...
I bought the cream cheese , butter and cream at Spar Hypermarket , Oasis Mall .

So , to start with what you need to do , is blend the products that will form your base to a fine powder . So , I put the Marie Gold Biscuits , the Hide and Seek and the almonds and gave it a good whiz to bring down to a fine powder .

In the above picture , you can see the biscuits and almonds finely powdered . I have also added a handful of dark choco chips for that extra zing . Next , you have to melt your unsalted butter and add to this mixture .

Mera bas chale toh I ll just make this base and have . It smelled and tasted heavenly ! :) . So , now you need to take a pan in which you want to make your cheesecake . I used a normal oval pan , because I couldnt find anything else . You can even use individual glasses . Whatever you use , grease it first with some butter . And then layer this oh-so-yummy butter infused crumble to about 2 inches . 

The base is ready ...


Now once you have layered your base , leave this pan in the fridge . Ab vapas aa jao to your kitchen . :P Next we add sugar to the cream and cream cheese . And mix all three together . Make sure to not over process this as then your cheese cake will be too thin and not hold up .

You can even add a lil bit of vanilla essence to this mixture after its blended well.It will really give out a yummy taste and smell.

Now , you can just proceed with this mixture and layer it on top of your base . But since I made mango wala cheesecake , I used mangoes to flavor it . In a bowl, melt the gelatin in hot water . To this add the puree of two sweet mangoes . To make the puree , just dice the mangoes and blend (without extra water ) in a blender . Add the pureed mangies to the dissolved galatin .

Add half of this mixture to the blended cream cheese . And blend this further . Then you need to get your dish out of the fridge and then layer this on top of the base .












Finally !! :)

You can leave it in the fridge for 1 hour . After this add the rest of the mango puree mixture as the third and final layer . Leave it overnight or at least for a couple of hours in the fridge . I did not take pictures of it when we were finally eating it . Too busy hogging :P :P :P . 

Don't you think , this is an easy recipe ? I mean it has no eggs and no baking , but still its cheese cake !! Yaay . I found this recipe on edible garden .
